Ensalada Verde is a classic Spanish side salad with fresh greens, cucumbers, tomatoes, red onions, and a simple vinaigrette. Tostones con Mojo
Tostones, also known as Fried Plantains, are a famous side dish in many Latin American countries. Unfortunately, its origins are unknown (but don't say that out loud - Cuba, Puerto Rico, etc would like to claim them as their own). I didn't realize until recently that tostones came from the word Tostón, which was the name of the Spanish currency used during the colonial period. Tostones are a crispy twice-fried plantain that makes for a great side dish and we serve it with a tangy, garlic mojo sauce. This side dish goes with any meal or even as a snack. Guineos en Escabeche
Guineos en Escabeche (Green Banana Salad) is a pickled green banana side dish that is very popular in Puerto Rico. The green bananas are marinated in garlic, onions, oil, vinegar, bay leaves, salt, olives, and peppercorns. Traditionally this dish is often served for special occasions around the holidays and it is a great summer side dish with chicken or seafood. Gluten Free
